This venture was a long-cherished ambition of Omar Calderón, who was inspired and supported by his wife and four daughters to make it a reality. The family’s coffee plantations, located at an altitude of 1800 meters above sea level, flourish under their attentive care and unwavering commitment to quality. With more than two decades of experience in coffee cultivation, Omar Calderón oversees the farm’s maintenance, while his daughters actively participate in the micro mill’s operations. Typica Mejorado was developed through selective breeding to improve yield, disease resistance, and overall cup quality. During harvest, only fully ripe cherries are carefully handpicked. These cherries are then pulped, retaining the fruit's pectin with the seeds. Once the coffee reaches the desired moisture level, the dried parchment is meticulously hand-sorted and stored for two weeks before being vacuum-packed for export.
