Finca Deborah is perched high in the cloud forests of Volcán Barú, starting at an altitude of 2000 masl. This extreme elevation creates an ideal environment for slow cherry maturation, resulting in deeper sugar complexity and elevated aromatic intensity within the coffee beans.
The farm was founded by Jamison Savage, a former finance professional who relocated from the United States to Panama in the early 2000s. Drawn by a passion for agriculture and sustainability, Jamison established Finca Deborah with a forward-thinking, data-driven approach. He is widely recognized for introducing carbonic maceration to the world of specialty coffee—a fermentation technique adapted from natural winemaking that has since become a benchmark in high-end coffee processing.
This particular lot represents one of Finca Deborah’s classic multi-stage washed fermentation profiles, first developed in 2016 and famously used during the World Barista Championship. Cherries are harvested at peak ripeness and then depulped using state-of-the-art, low-water equipment—part of Jamison’s commitment to sustainability.
Drying takes place in a climate-controlled drying house, where the coffee is carefully layered across three-tiered raised beds at different heights. Each level has a distinct function:
- Top tier: Exposed to the strongest sunlight, it quickly reduces surface moisture and suppresses unwanted microbial activity.
- Middle tier: Promotes sweetness development and moisture balance in the beans.
- Bottom tier: The coolest layer, designed to stabilize and preserve delicate aromatic compounds.
