Roberto Brenes’ venture into coffee began as a retirement project, driven by a deep connection to the land and a dedication to quality. Auromar, originally founded as a personal passion, quickly gained global recognition for its commitment to sustainable practices and premium coffee. The estate’s name, “Auromar,” combines “aurum” (Latin for “gold”) and “mar” (Spanish for “sea”), symbolizing its gold-standard quality and the location between Panama’s mountains and ocean.
Catalina Geisha grows at altitudes of 1,600 to 1,750 masl, where the rich volcanic soil and cool, mist-laden climate provide ideal growing conditions for this unique variety. The high altitude, stable temperatures, and fertile land contribute to Catalina Geisha’s standout profile, with flavor notes often marked by floral, citrus, and tropical fruit tones.
To bring out the coffee’s natural complexity, Auromar employs a Natural processing method. Only the ripest cherries are handpicked mid- to late-harvest, ensuring peak flavor. The cherries are then spread out on drying beds, where they are exposed to open air day and night, sometimes even drying under the moonlight. This slow drying process, taking between 20 and 30 days, allows the coffee’s flavors to deepen. Once dried, the cherries are milled to remove the peel and pulp, resulting in a coffee that captures the depth and richness of its terroir.
