Finca Dios Todo Poderoso is located in Matagalpa, a region renowned as the epicenter of specialty coffee production in Nicaragua. Founded by Santiago Isaac Lopez Arauz, a small coffee producer with nearly a decade of experience, the farm specializes in cultivating high-quality Maracaturra beans. Maracaturra, often referred to as the "elephant bean" due to its large size, is a natural hybrid between Maragogipe and Caturra varieties. Known for its resistance to wind damage, this variety is highly valued for its excellent cup profile and high yield, making it a popular choice in regions like Nicaragua, Brazil, and El Salvador.
Finca Dios Todo Poderoso has gained recognition for its Maracaturra, participating in the Cup of Excellence for two consecutive years (2022 and 2023). In the 2023 competition, the farm was selected as a National Winner finalist, scoring 86.9 points for its natural-processed Maracaturra. The same lot is used in the coffee featured here.
The farm is situated at 1,280 meters above sea level, where Santiago employs skilled local pickers to harvest only fully ripe cherries. Post-harvest, the cherries undergo a sorting process using water to remove floaters, ensuring only high-quality cherries are dried on raised beds inside a parabolic drier. The drying process takes up to three weeks to reach the optimal moisture content of 12%, after which the coffee is milled, sorted, and prepared for export. The farm's participation in the Cup of Excellence has opened opportunities for them to export their produce, further enhancing their reputation beyond the local market.
