The Mormora & Guji Highlands Plantation, privately owned by the operators of the renowned Mormora estate, is one of Ethiopia’s standout coffee farms. Together, these estates span 250 hectares dedicated exclusively to coffee cultivation in the southern Guji region. The estate is organically certified, a reflection of its commitment to sustainable farming practices that not only protect the surrounding environment but also impart a rich, distinctive character to the coffees produced here.

The farm is situated in the southern Guji Highlands, near Kayon Mountain, at an impressive average elevation of 2,050 meters above sea level. The coffee plants grow under a natural rainforest canopy, benefiting from fertile soils, cool nights, and steady rainfall—factors that contribute to the dense, complex flavor profiles characteristic of Guji coffees. Stretching over 1.5 kilometers of highland terrain, the estate is perfectly positioned for producing coffees of remarkable clarity and vibrancy.

Harvesting at Mormora is carried out with great care to ensure only the ripest cherries are selected. Once picked, cherries are transported to the Sewana milling station and laid out on African raised beds within 6–8 hours to prevent premature fermentation. The cherries are spread to a depth of just 2–4 centimeters, which allows for consistent airflow and even drying. During the process, workers meticulously turn the cherries at least twice per hour, while also hand-sorting to remove unripe, insect-damaged, or overripe cherries.

Drying typically lasts between two to three weeks, depending on weather conditions. To maintain quality, the cherries are carefully covered with plastic sheeting during rainy periods and at night, protecting them from excess moisture while ensuring a slow, controlled drying.
