Granitos de Altura del Ortiz is a notable Costa Rican coffee crafted with precision by Omar Calderón on his farm, Finca Ortiz 1900. Situated in Santa María de Dota, a quaint mountain town nestled along the Cordillera de Talamanca range, the farm is perched at an impressive altitude of 1970 meters above sea level. This exceptional coffee earned the prestigious Cup of Excellence award in 2015, having been rigorously evaluated over 120 times by an esteemed international jury.

In 2013, the Calderón Martínez Family realized their dream of establishing the micro mill, Granitos de Altura del Ortiz, in Santa María de Dota-Tarrazú. This venture was a long-cherished ambition of Omar Calderón, who was inspired and supported by his wife and four daughters to make it a reality. The family’s coffee plantations, located at an altitude of 1800 meters above sea level, flourish under their attentive care and unwavering commitment to quality. With more than two decades of experience in coffee cultivation, Omar Calderón oversees the farm’s maintenance, while his daughters actively participate in the micro mill’s operations. Their combined efforts and dedication to excellence are evident in the premium quality coffee they produce, which they take immense pride in.

The coffee variety featured in this lot is Typica Mejorado, a hybrid derived from the traditional Typica variety. Typica Mejorado was developed through selective breeding to improve yield, disease resistance, and overall cup quality. Often involving crosses with other coffee types, this variety thrives at high altitudes in Latin America and is acclaimed for its complex flavor profile.

During harvest, only fully ripe cherries are carefully handpicked. These cherries are then pulped, retaining the fruit's pectin with the seeds. The coffee is spread on raised African beds and dried under the abundant sunlight, which speeds up the drying process and results in a clean and balanced cup profile. Once the coffee reaches the desired moisture level, the dried parchment is meticulously hand-sorted and stored for two weeks before being vacuum-packed for export.
