In this selection, we feature the Green Tip Geisha varietal cultivated at Los Lajones, one of HiU’s prized farms. Owned by the legendary Graciano Cruz, HiU Coffee Company has been a pioneering force in specialty coffee across Panama and El Salvador. Graciano, a full-time farmer and respected figure in the coffee world, resides near the base of Volcán Barú—just minutes from his farms, including Los Lajones and Emporium. Known for his relentless innovation, Graciano has continuously explored new processing techniques to unlock greater complexity in coffee.
Founded in 1992, Los Lajones gained international recognition when it placed 12th in the 2008 Best of Panama competition. More recently, in June 2025, its Geisha entries secured #6 in the Natural category and #7 in the Washed category, reaffirming the farm's reputation for excellence.
This particular lot of Green Tip Geisha is planted at an impressive altitude of 2,000 meters above sea level. At such elevations, the slower cherry maturation allows the coffee beans to develop exceptional density and intricate flavor complexity—hallmarks of high-elevation Panamanian coffees.
The coffee is processed using a Honey method, a technique that leaves some of the fruit’s natural sugars (mucilage) on the parchment during drying to enhance sweetness and mouthfeel. The process begins with an 82-hour anaerobic fermentation in an oxygen-restricted tank. After pulping, the beans—still coated in mucilage—are spread thinly on African raised beds, where they dry slowly over 26 days. Once optimal moisture content is reached, the beans are hulled, carefully sorted, and allowed to rest.
