Kukurucho is a high-altitude coffee farm in Pacheco, Tepanguare, La Paz, Honduras, owned and operated by Rony A. Gámez. A second-generation coffee producer originally from Marcala, Rony established Kukurucho around ten years ago with the goal of creating a research-driven farm focused on processing experimentation, cost understanding, and producer education under the Café Raga project. Today, Kukurucho is recognised as a model farm in the region, contributing both high-quality microlots and genetic diversity to surrounding producers.

Rony Gámez’s work is driven by passion and education. Kukurucho functions not only as a production farm but also as a seed bank, supplying project producers with access to diverse and carefully managed varieties. Its isolation from neighbouring farms strengthens this role. Through Kukurucho, Rony shares knowledge on processing, cost structures, and agronomic decision-making, supporting the long-term sustainability and quality trajectory of coffee production in La Paz.

The farm sits at approximately 1,650 metres above sea level, near the highest peak of the surrounding mountain range. This elevation brings cooler temperatures, pronounced day–night shifts, and extended cherry maturation. The mountainous terrain and physical isolation of the site help maintain plant health and reduce cross-pollination risks, reinforcing its role as a seed bank. These conditions promote dense seeds and stable internal structure, well suited to clean washed preparations.

The Geisha variety grown here is carefully managed due to its sensitivity and lower yields. When cultivated at altitude and processed precisely, Geisha is valued for structural clarity and refinement rather than intensity alone. Kukurucho hosts a diverse set of varieties including Typica, Geisha, Pacamara, Pacas, and Yellow Catuai, with SL28 currently being established.

Harvest runs from January to May, with cherries selectively hand-picked at full physiological ripeness. For this washed Geisha lot, only healthy cherries are collected, followed by a brief flotation to remove defects and impurities. The cherries are then pulped without water, preserving mucilage integrity before drying. Instead of extended wet fermentation, the parchment is transferred directly to raised drying beds, where it undergoes a slow, controlled drying over approximately 25 days. After drying, the coffee is rested prior to milling to stabilise moisture and internal structure.
