"The dry aroma is filled with orange peel, grapefruit, hazelnut, and honey. Upon tasting, the vibrant notes of orange peel, orange, and grapefruit unfold, with honey, floral hints, black tea, and hazelnut rounding out the clean, sweet finish."
The Mierisch family has been a cornerstone of Nicaraguan coffee farming for over a century, with roots going back to the early 1900s when Bruno Mierisch worked the coffee farms alongside his son, Wilfrido Mierisch. This deep connection to the land has spanned multiple generations, with today's family members continuing the tradition in the highlands of Nicaragua, particularly in the Matagalpa and Jinotega regions. The family's commitment to producing high-quality, shade-grown coffee has established them as leaders in Nicaraguan coffee production.
One of the standout varieties they cultivate is Javanica, named by the Mierisch family after trees they initially identified as "Java." These trees were cultivated on their farms for many years and won 2nd place in the 2008 Nicaragua Cup of Excellence. Subsequent genetic testing in 2020 confirmed that the variety was, in fact, a match to the Java variety. The Java variety has an illustrious history, originating from Ethiopian landraces brought to the island of Java in 1928 and later reintroduced to Central America in the early 1990s. Noted for its resistance to leaf rust and high cup quality, this variety has spread across coffee-growing regions globally, including Nicaragua, where it thrives on Mierisch farms.
Although many of their farms, such as Los Placeres, are situated at lower altitudes (750-970 masl), the Mierisch family continues to produce exceptional coffee. Their meticulous processing methods involve handpicking ripe cherries and pulping them while retaining the fruit’s pectin. The coffee is then dried on African beds under ample sunlight, resulting in a clean and bright cup profile. Once dried, the parchment is manually sorted, stored, and vacuum-packed to maintain its quality for export.
This careful approach underscores that even coffee grown at lower altitudes can achieve exceptional quality, a hallmark of the Mierisch family's expertise.
