Vivid – Natural Carbonic Macerated Washed
In Vivid, cherries undergo carbonic maceration in whole-fruit form, allowing the beans to absorb bright fruit esters during the early stages of fermentation. Midway, the fruit is removed and the coffee is traditionally washed, resulting in a cup that is fruit-forward yet structured and clean. Expect intense aromatics and tropical clarity.
"A dazzling profile with sparkling champagne effervescence, layered with stone fruits like peach and nectarine, and deepened by the berry richness of blueberry and grape juice. Complemented by citrusy highlights of kaffir lime and lemongrass. Floral notes of jasmine drift through the cup, finishing with a smooth hint of Honeydew melon sweetness."
Echo – Cascara Infused Carbonic Macerated Washed
Echo incorporates cascara (dried coffee cherry) into the carbonic maceration tank. This by-product, often used for tea, contributes its own fruity and floral profile to the fermentation. After infusion, the fruit is removed and the coffee is washed. The result is a cup that is layered, complex, and uniquely reminiscent of cascara tea, with deep sweetness and washed precision.
"A vibrant cup layered with berry sweetness—blueberry, mulberry, and strawberry jam—balanced by citrusy brightness of sweet orange and bergamot. Notes of peach and rosehip add a soft, fruity roundness, while delicate floral aromas of jasmine and lavender elevate the aromatic profile. A touch of honey rounds out the cup with a smooth, comforting sweetness."
Illumination – Carbonic Macerated Washed
Illumination begins with pulped coffee undergoing carbonic maceration in a sealed, oxygen-free tank. Following fermentation, the coffee is fully washed and gently dried. This lot reflects the purest balance of refined structure, elegant acidity, and aromatic clarity, offering a modern, clean interpretation of carbonic maceration.
"A vivid and complex cup featuring vibrant citrus layers of bergamot, lime, Citron and lemongrass. Juicy notes of blackberry, prune, and mixed berries add depth, while peach and mango bring a tropical, succulent sweetness. The cup is delicately lifted by floral orchid aromas and a touch of green tea elegance, offering a refreshing and aromatic finish."
Drying Process: Climate-Controlled Three-Tier System
All three coffees are dried in a custom climate-controlled facility using a three-tier raised bed system:
- Top Tier: Fast moisture reduction under sunlight to suppress spoilage.
- Middle Tier: Encourages sugar development and internal balance.
- Bottom Tier: Coolest layer, designed to lock in volatile aromatic compounds.
