"Upon grinding, the aroma presents blackberry, grape, mango, and cocoa. On the palate, blackberry and blackcurrant lead, followed by orange peel, mango, hazelnut, and cocoa."

Finca Auromar is a Brenes-Eleta family project led by Roberto Brenes in Panama’s Chiriquí highlands. Established in 2006, the estate brings together specialty coffee cultivation and the preservation of highland tropical forest. The family’s approach balances coffee production with the protection of the surrounding landscape. Native trees and retained forest remain central to the farm’s identity.

Also known as Finca La Aurora, the estate lies in the highlands of Candela. Native shade trees and Hass avocado trees create a sheltered growing environment with relatively moderate temperature fluctuations. The harvest runs from late December into March, coinciding with the transition towards drier weather. Auromar’s Pacamara plantings occupy elevations of 1,525–1,590 metres above sea level.

Pacamara originated in El Salvador from a cross between Pacas and Maragogipe. It forms part of Auromar’s exploration of Arabica varieties alongside Geisha, Tekisic and Lupao. The estate has dedicated 4.5 hectares to Pacamara. These plantings extend the family’s work in evaluating how different varieties perform in Candela’s growing conditions.

Coffee cherries are picked manually at peak ripeness and selected in the field. Auromar rewards careful harvesting through premiums that encourage the selection of ripe fruit and protection of the trees. For this natural Pacamara, the cherries are dried whole on raised African beds. The mesh surfaces allow air to circulate around the fruit as it dries.

After drying, the coffee rests before final preparation for shipment. Auromar schedules milling close to dispatch, followed by careful manual selection. The prepared green coffee is vacuum packed and boxed to protect it during transport. This attention carries the farm’s quality management from cherry selection through to export.
