Walter Samuel Ramirez is a second-generation coffee farmer who runs the El Pino estate in the highlands of central Honduras. Nestled in the Comayagua Mountains at an altitude of around 1,600 meters above sea level, the estate benefits from a cool microclimate and rich volcanic soils—ideal conditions for producing dense, flavorful coffee. Of his 5-hectare farm, 3 hectares are dedicated exclusively to the Typica variety, a classic cultivar known as one of the foundational lineages in Arabica’s genetic history.
This lot is a semi-washed Typica, showcasing a clean and layered flavor profile, soft acidity, and a fresh, delicate aroma. Walter’s choice to grow Typica reflects both tradition and his commitment to quality. Over the years, he has remained devoted to producing boutique, small-lot coffees while also exploring innovative processing methods to highlight the potential of his terroir.
For this lot, cherries are selectively handpicked and quickly transported to the washing station, where they are pulped to remove the outer skin. The mucilage-covered beans are then submerged in cool, clean water to initiate fermentation. Over a 36-hour period, the natural sugars in the mucilage begin to break down, enhancing sweetness and complexity while preserving clarity in the cup. Once fermentation is complete, the beans are carefully dried under solar dryers for 20 to 25 days to ensure even and gradual moisture reduction.
After drying, the parchment coffee is transported roughly 30 minutes to a nearby mill, where it is hulled and rested under controlled conditions before export. The result is a charming and elegant expression of Typica, embodying both Walter’s craftsmanship and the distinctive character of Comayagua’s highland terroir.
