Established in 1918 by Canadian immigrant Alexander Duncan, the Kotowa Duncan Estate has a rich history rooted in the Boquete region of Panama. The name "Kotowa" comes from the indigenous Ngäbe-Buglé language, meaning "mountain," reflecting the estate's breathtaking highland location. Situated in the Chiriquí Province, this estate benefits from Boquete's renowned coffee-growing conditions, including high-altitude terrain, rich volcanic soil, and a favorable climate. Nestled in the highlands at elevations ranging from 1,200 to 1,700 meters above sea level, Kotowa Duncan Estate produces coffee of exceptional quality, thanks to its unique microclimate.
Today, the estate is managed by the descendants of Alexander Duncan, with Richard Koyner, a member of the Duncan family, playing a key role in its operations. Richard, whose mother was a Duncan, has continued the family tradition, ensuring the estate's reputation for producing high-quality specialty coffee remains intact.
This particular offering from Kotowa Duncan Estate features the Caturra variety, grown at an elevation of 1,700 meters above sea level and processed as a natural coffee. The cherries are carefully picked at peak ripeness and begin their journey with a 48-hour rest on shaded raised beds, where they are cloaked in a fine cloth. This initial step encourages a slow drying process and the cultivation of beneficial microbes, adding depth and complexity to the flavor. Following this, the cherries are spread in a single layer and sun-dried, allowing the flavors to mature fully.
After drying, the cherries are rested for three weeks before being hulled. The coffee is then meticulously sorted and vacuum-packed to preserve its exceptional quality.
