Meet Birhanu, a dedicated coffee farmer from Halo Hartume village in Gedeb. With 30 years of experience, Birhanu employs organic farming methods to cultivate the 74112 coffee variety on his 4 hectares of land. Harvesting approximately 5300 kg of coffee annually, he initially sold his produce at the local market in Dilla. Unsatisfied with the prices, Birhanu entered the prestigious 2021 Cup of Excellence, securing 19th place and cementing the high quality of his coffee.
Nestled in the heart of the Gedeo zone, just a few kilometers from Gedeb town, lies the Halo Hartume washing station. Surrounded by the lush hills of Halo Hartume, where coffee thrives at altitudes ranging from 2100 to 2300 meters above sea level, this station is a beacon of quality in coffee production.
This coffee is processed as Natural. During harvest, Birhanu meticulously gathers the ripe cherries. First, he sorts the coffee cherries to ensure only the high-density cherries are selected. This is achieved by soaking the cherries in water and removing any floaters. Next, the cherries are placed on African raised beds to dry naturally. This process takes between 2-3 weeks until the ideal moisture level is reached. The coffee is then hulled and sorted again.
This selection is an underscreen selection where the selection of the coffee is a special lot of a very small size beans under the usual SCA standard screen size. Which creates a brighter coffee flavour.
