One of the most sophisticated coffee operations in the world, Daterra is located near the city of Patrocínio in the state of Minas Gerais, Brazil. This region, known as the Cerrado, is famed for its fertile, flat land—ideal for coffee growing. Through its commitment to quality and innovation, Daterra has transformed the farm into an intensive network of individually monitored lots, many of which feature automated irrigation systems to ensure that each plant receives the perfect balance of nutrients and water.

The coffee harvest at Daterra is approached with meticulous precision. Members of the team are dispatched to evaluate the cherries across different lots, harvesting small batches to strategize the optimal time for each varietal. This careful approach ensures that every coffee is picked at its peak, preserving the integrity and flavor that Daterra is known for. Once harvested, the quality team decides how to best utilize each coffee, selecting where it will be featured on the farm’s vast offerings.

Daterra offers a diverse menu with three tiers of offerings: Masterpieces, Collections, and Classics. What we have here is from the Collections series—high-end, consistent coffees that the quality team scores between 86 and 89 points. Each batch is packed in patented Penta boxes, ensuring the coffee remains fresh and vibrant, with each box holding 24.2kg of vacuum-sealed perfection.

Among the highlights of the Collections series are two remarkable coffees: Stardust and Sweet Yellow. Both are cultivated at an altitude of 1,150 meters above sea level, but they differ in variety and processing method, each bringing a unique experience to the cup.

Stardust is an exceptional coffee made from the Yellow Bourbon variety. What makes Stardust truly unique is its processing method: the coffee cherries are allowed to fully dry on the tree before being harvested. Unlike the typical approach where cherries are picked when ripe and then mechanically dried, Stardust cherries are picked only after they have fully dried on the tree. This process, feasible only in very dry and stable weather conditions, ensures a concentrated and distinctive flavor profile. After harvesting, any cherries that are not fully dried are separated through optical color sorting to maintain the integrity of this single-variety lot

Sweet Yellow, on the other hand, is made from the Yellow Catuaí variety and processed as Pulped Natural. After mechanical sorting, the cherries are pulped, leaving some excess mucilage on the parchment. The parchment is then dried in a mechanical dryer, a step that ensures consistency in quality and to highlight its terroir. After drying, the beans are rested for three weeks to develop their flavors fully. The final step involves mechanical sorting to guarantee the highest quality before the coffee is vacuum-packed and boxed for export.
