Every year we will buy at least an exotic variety from this farm. In 2019, we procured for the Pacamara Natural which was planted in the Las Magaritas farm. Last year we obtained the Sudan Rume washed, which was also planted at the same farm, Las Magaritas. Actually, we have been eying the Geisha for quite sometime. for a start, decided to try a new processing profile from this farm.

The honey process was selected. For this process, only the ripe cherries with a certain brix value is selected to maintain the optimal sugar content of processing. The cherries is then depulp and segregated into two batch. The first batch is dried on patio, and the other batch is dried inside of a drying silo. The one that is dried in the silo is not fully dried until it reach the 12% moisture level. It is dried until it reached 40% moisture inside the silo and it is then transferred to the patio and let it to dry until it reaches the 12% moisture.

This selected lot is planted at an altitude of 1700 masl. The seeds of Geisha of this farm is originally from Panama. Back in 2007, Don Rigoberto had the opportunity to lease a piece of land in Panama. The farm is called La Carleida. As an expert in processing coffee, Don Rigoberto had the opportunity to produce high scoring Geisha in the following year in the Best of Panama series 2008. In BoP 2008, the farm was placed at #1. From there onwards, Don Rigoberto has been bringing in geisha seeds from panama to his farm in Colombia.

The coffee was airfreighted from Colombia directly. When it arrived the green coffee has a very candylike aroma. Even throughout the roasting process, instead of the usual nutty aroma, the coffee has a very strong aromatic aroma. Last time we had this was when we were roasting the Paraiso Lychee.
