Don Joel is a dedicated Costa Rican producer known for his careful farm management and disciplined approach to quality. Working within one of Costa Rica’s most established coffee-growing regions, he focuses on expressing variety and terroir through precise harvesting and processing. While Costa Rica is historically recognized for exceptionally clean washed coffees, Don Joel has applied the same rigor and control to natural processing, producing coffees that remain structured and refined.
The farm is located in Costa Rica’s Central Valley / West Valley area, a region shaped by volcanic soils and a stable microclimate. Coffee is grown at high elevations, typically around 1,500–1,800 meters above sea level. Cool nighttime temperatures and moderate daytime warmth slow cherry maturation, resulting in dense beans. These environmental conditions contribute to clarity, balance, and a well-defined structural acidity in the cup.
This lot features the Kenia variety. Kenia is closely related to the SL family and is valued for its strong structure, vibrant acidity, and aromatic potential. When cultivated at altitude and paired with controlled processing, it is capable of delivering depth.
Cherries are selectively handpicked at full ripeness, with careful attention to uniform maturity. After harvest, the cherries are processed using the natural method, where they are dried whole on raised beds. Drying is closely monitored, with regular turning to ensure even moisture reduction and to prevent excessive fermentation. The process is intentionally slow to stabilize internal moisture and preserve structure. Once optimal moisture levels are reached, the coffee is hulled, dry-milled, and rested to allow the profile to settle before export.
