This coffee is a microlot selection by a well known the Peralta family which is based in Nueva Segovia. The farm is located at around 1500 masl near the border of Honduras and Nicaragua. Over the past 15 years, a lot of Nicaraguan COE farms are located in this area. It seems that Nueva Segovia is the breeding ground of top coffee farmers in Nicaragua. 

The definition of microlot in Nicaragua is different from Brazilian microlot or Ethiopian microlot. The selection is based on the height of which the tree is planted. This selection consist of Strictly High Grown coffee (SHG). The selection of this lot is based on where the height where the coffee is planted in the Peralta family farm. This lot is from height between 1500-1600 masl only. They believe the selection of that height range has a similar microclimate. Microlot producers from Guatemala practice the same philosophy. On top of that, the Bourbon varietal grows well on that height range.

Aside from the honey processed coffee, the Peralta has been producing an award winning washed processed coffee. These are from the caturra and catuai varietal. These two varietal are grown in the same farm, but with a different microclimate, which is around 1200 masl. 

What we have here is the yellow honey processed coffee. As mentioned earlier, this coffee is grown in between 1500 masl - 1600 masl. These are microlots and the output is not substantial in compare to the the catuai and caturra varietal. The production cost is cheaper to process the SHG beans as honey process rather than to send it to the washing station which is centralize at a lower altitude. 

We did a multi sample roast when we tried to learn about this coffee. Light roast was very vegetal as the acidity was more towards malic rather than citric. Medium roast is best for this coffee. The ideal roast temperature before we drop the coffee was around 207c. 

This is a very sweet cup of coffee. It is creamy like butter and has a strong notes of vanilla and strawberry. Its acidity is more towards malic acidity rather than lime or citrus tones which contributes to a bright and tart taste.
