Panama Santa Clara Auromar Alma Catuai Natural

Finca Auromar is located in the northwestern of the Chiriqui province, in the valley of the Volcan Baru, bordering with Costa Rica. The owner, Roberto Brenes is a coffee enthusiast. In the beginning, Roberto was focusing on the geisha varieties. Since  winning the Best Panamaian Washed Geisha Championship, Roberti began to plant other type of varieties on the manor. This selection is the result of that. 

This coffee is processed at a nearby processing centre for post processing. Aurora Estate send the harvested riped catuai at Cafede Eleta SA. It is about 3 kilometres away from the farm. The processing center is a modern station that complete with a laboratory for cup testing and manual screening. 

When we did a pre test roast over the Ikawa, we notice that this coffee bean has an intense malic acidity. Something like yogurt. The floral notes is there as well as the fruitiness. We decide to push the test further over the roast to get the best of the beans. 

The ground coffee has an aroma of berry and peach and strawberry yogurt. We pushed the roast to a mid level and it has muted the yogurty/malic acidity and change it to a mango like acidity. There are some bright notes of strawberry during first sip. The main notes is accompanied by the aroma of orange and orange peel which is sweet and smooth.
