There are ups and downs in running a coffee farm. Like any other business, there are good times and there are bad times. What we have here is the spin off of the infamous coffee processor, Casa Ruiz. A contender of the Best of Panama in 2011, 2012, 2018 and 2019 for the infamous Baby Geisha Washed process from the famous Berliner Estate.
In 2014, the company was facing a difficult period of time. Casa Ruiz decided to restructure its business into a various different division. K & R Specialty Coffee was born. The idea was to facilitate the production of specialty coffee among the small holders within the Boquete region. A simillar concept to La Palma y Toucan as well as the Panaman Creativa Coffee District (CCD) but a more classic processing approach. With the experience in farming and processing, Don Ruiz assist these small holders and process coffee at the existing Casa Ruiz processing station located in Horqueta. The operation is led Plinio Ruiz Jr. Uncle to Keith Pech (owner of Damarli Estate)
What we have here is a collective of Geisha that is produced in the Boquete region by various smallholders in the Boquete. Only those that is planted above 1600 masl is selected for this lots. Don Ruiz is an expert in the wash processing technique based on multiple awards for the Baby Geshia at the Best of Panama on many occasion. A washed process coffee from Panama is different from the washed process coffee from any parts of the world. The technique is still similar. First, the cherry skin is remove. Next, the coffee that still contains the mucilage is anaerobically fermented with yeast for 3 to 4 days in a tank before it is fully washed to remove the remnants on the coffee bean. The coffee is then placed on a raised beds for drying until it reaches the optimum dryness. The coffee is then placed in a silo for 4 weeks before it is packed for export.
Upon grounding, the aroma of lemon skin, coconut, jasmine and mild lychee aroma. At first sip, lemon custard with the aroma of Jasmine flower. As the coffee gets cooler, the aroma of honey is more bright with mild aroma of lychee. A very typical geisha flavor. Creamy, sweet and rich.
