Hacienda Esmerelda consist of four farms. Canas Verdes, El Velo, Jaramillo and Palmira. This Natural process Geisha is produced at the Jaramillo farm, which is located in the West of Boquete. For the natural process coffee, the ripest cherry is picked  and goes directly to the patio to be put on dry. Depending on the weather and the composition of the lot, the coffee will dry for 3 to 5 days on the concrete patio for 8 hours a day. Upon reaching a desired moisture level, the coffee is then brought to the Guardiola dryer to expedite the drying process mechanically. This method is to avoid the sour and fermented notes on its coffee as natural sun dried process could take weeks before it is properly dried. Upon reaching the right moisture level, the dried cherry is then milled. The dried coffee beans is rested for 30 to 45 days in a nylon bag  to stabilize and improve the cup quality.

The dry fragrance can feel the fragrance of strawberries, peaches, blueberries and flowers. The entrance is also made of peaches and strawberries As the main axis, followed by bergamot, fresh blueberries, peach yogurt, with a little rose smell, Delicate and sweet.
