This year we are lucky enough to bring in this coffee from the Damarli Estate. Damarli estate is a specialty coffee farm which is located in Boquete Panama. It all started back in 1995 when David Pech, a photographer in the US and his wife Lia Pech bought thee farm from a neighbouring Bruna family . Lia’s family has been involved in coffee industry in Boquete for four generations, which motivate the couple to get involved with the family business. The name Damarli is a combination name and the investor of the business. DA-vid, MA-nfred, R-uth and LI-a.
The coffee is planted at and altitude of 1450 masl and this coffee comes from the catuai variety and process as the Noble process. Noble process is a Damarli special coffee process where the coffee is macerated with yeast for 5 to 10 days. In this case a the Rogue Pacman type yeast strain. After the maceration process, the coffee is dried off on dried raised beds with a constant monitoring. The coffee is moved regularly to ensure a constant drying until it reach the 10% moisture level.
Every year, David will change its yeast strains from year to year. Last year he was using the Red Fox yeast strains and this year, he was using the Rogue Pacman. Rogue Pacman is a propriety yeast strains from the Rogue Brewery of Newport Oregeon.
