Panama – CCD – La Llorona
This is the second edition of the Panama Creativa Coffee District (CCD). This collection is from a farm called La Llorona, owned by a Lourdes Yanguez. La Llorona is consist of 20 hectares of land and holds 80,000 trees of Catuai and Caturra varieties. Lourdes was born and raised at the coffee farm and she has been close with coffee all of her life. She inherited the land from her parents. Asides from coffee, the farm has ranching cattle, vegetable and fruits planted around the coffee.
Harvest are between December to February each year. Once cherries are picked, they are immediately sent to Creativa’s wet mill where they are processed. As usual, the guys at CCD has a set of philosophy on how a coffee cherry is processed, they are against the used of water to start with. This coffee is processed as Natural. Being an expert of modulating the flavour of coffee, the cherry fermentation differs from case to case basis, the first process is to determine the ph and the Brix of the cherries and set a target how high the pH and the Brix be during the fermentation process. CCD processing plan has been creating masterpieces that elevate taste experience.
Upon grinding, this coffee has a strong aroma of wine, cherry chocolate and rum. At first sip, we can taste grapes, and cherry chocolate with blackberry acidity with hints of spices. It has a strong flavour. The coffee is solid and full.
