CCD is a forward-looking Specialty Coffee producer at the Chiriquí province in Boquete, Panama. By transforming a traditional wet mill and drying patio into a modern state-of-the-art processing facility, CCD integrates art and specialty coffee in a unique and authentic space where artists are promoted and celebrated to inspire industry participants around the globe to support and demand new coffee production standards that guarantee higher incomes for growers and sustainable ecological practices for processing stations worldwide.
Asides from that CCD are the team behind El Palma & La Toucan (EPLT). Inspired by the Neighbors and Crops model by EPLT in Colombia, CCD is a same model which focus on Panaman specialty coffee producers in Hornito, Renacimiento, and Boquete.
This first offering from CCD is from a single farmer in Hornito, Panama. Elvin Rios was only 33 when he started his coffee farm. When he first started, he was renting the land from a friend. After 4 years, he now manage two farms. El Letrero of 7 hectares, 2 planted with coffee and El Paraiso of 8 hectares, 3 planted with coffee.
Elvin has planted over 22,000 coffee trees of Catuai and Obata varietals. The farm is located at an altitude of 1300 masl which is perfect for the two varietals. All if his coffee is processed at CCD wetmill.
85% of the coffee at CCD wetmill is processed as Natural or honey and only a small amount of coffee is process as washed. This offering is process is as Natural process. The range of natural coffee profile is extensive. From the introvert 24 hours cherry fermentation to the borderline 96 hours in controlled atmospheric condition.
Aroma and taste can be tune depending on how long the fermentation is conducted. Its an art. CCD has an expertise in ensuring consistency towards all the process that they develop. They are able to ferment and develop loads of yeast colonies. When the cherries reach the targeted pH or Brix, they are able to immediately stop the fermentation by using a thermal shock.
Remember, this offerings consist of Catuai and Obata varietals. With expertise from CCD in manipulating with flavor, the taste of the coffee on this offering produce a unique dry notes o wine, raisin, grapes, strawberries and blue berries. At first sip is more on the tartness of wine and raisin. But the main notes of this coffee is the sweet flavour of peaches, blueberries and strawberries. The flavour is strong, rich and the taste is sweet and full.
