Panama – CCD – Bonita Spring

Finca Bonita Spring is among top producers in Panama. They are owned by the Miro Brothers. The farm has at least 80 years of history when it comes to coffee. Up until 2017, Arturo and Olmedo segmentized its coffee farm and began producing specialty coffee lot and to date they have moved away from the traditional harvest- and- sell to 100% specialty coffee farm. The farm sits at an average of 1250 masl.

This coffee consist of multivarieties of coffee. It has Caturra, Catuai, Pacamara, SL 28 and Hierloom blend. The guys at Creativa Coffee District (CCD) took it as a challenge. At CCD, coffee production is an art. This coffee is process as Natural.

Roasting a multi-variety coffee beans can be challenging, however, being planted at a below average altitude, the coffee reacts well during the drying phase and the the roasting became stable until the first crack.

Upon grounding, the coffee has very rich wine, strawberry, grape and peach aroma. At first sip, it has the tartness of wine, berries and cherry aroma. As it gets cooler, the coffee became sweet, like a ripe sweet mango flavour. The acidity is bright. Truly a unique result from the CCD natural process.
