Nicaragua - Finca San Salvador
This is another coffee that we obtain from Project Origin.
This coffee is planted by a producer Luis Emilio Valladarez. He has been in charge for the operation and managing the farm for the past 4 years. This farm is his fourth and latest farm that he has under his arm. He also own Finca Buenos Aires, Finca Miraflor and Ojo De Agua.
In 2018, he participated in the Nicarguan COE and was rank #30 in the competition. In 2018, the coffee that was presented was Java variety and was planted at Finca Buenos Aires. With his experienced, expertise and leadership, he thrived to turnaround the production of the caturra variety that is planted in at Finca San Salvador.
The farm is located in Dipilto area an area with a pleasant microclimate that has ample of sunshine to dry coffee naturally. The variety that is used for this lot is from the Caturra Variety and planted at an altitude of 1400 masl.
This lot as processed as a natural process. Under the strict supervision of Don Luis, only the ripe cherries is handpicked during harvest depending on the brix value. At the processing station, the coffee went through a series of selection and sorting to decide whether to process it as washed or sundried. This selection is selected due to its high sugar content in the cherries. It is then sent to the raised beds for drying. Upon reaching the optimum moisture level, the dried cherries is sent to Finca Buenos Aires for milling and packaging and prepared for export.
Upon grounding, we could detect the aroma of plum and black berries. On the cup, the coffee is very sweet, and very chocolate forward. It is medium bodied and has hints of dark berries in the cup. The coffee is very very sweet.
