Indonesia - Kerinchi by Pak Lukman
This full washed lot is produced by Pak Lukman who is from the town of Semendo located in south of Sumatra. Kerinchi has always overlooked by those looking for more traditional coffee region such as Gayo or Mandheiling Coffee which is produced further up north in Sumatera.
The quality of of coffee produced in Kerinchi is unparalled and putting a name in the Indonesian Specialty coffee industry. Pak Lukman has been a coffee farmer for 19 years. He is among the first generation to farm coffeee in his family. He puts a great deal of attention and care into farming and harvest activities.
Pak Lukman process his own coffee and Fully Washed proccess is not common in Indonesia and we are quite astonished by the result of the coffee. Normally in Indonesia, Giling Basah is a more famous process .
During harvest, only the ripest cherries are picked and these are then floated to remove any underweight or damaged cherries before being pupled in his mechanical pulper. After pulping , the coffee is delivered to a tank an fermented for 24 hours. After fermentation, the coffee is washed and dry on raised beds.
On the cup, the coffee has a body of dates, acidity of plum/figs with chocolate ending. It has a hint of cloves aroma in the midsection. The coffee is best brew as black and with milk
