This coffee is from Finca La Providencia located in the Municipality of San Pedro Necta. It is owned by Maximiliano Palacios. A third generation coffee farmer. The name of the coffee, Palhu is formed from the combination of Palacios and the department of Huehuetenango.

The coffee is fully washed after pulping and fermenting, dried in the sun on patios as well as in mechanical dryers.The heart of La Providencia is a beautifully maintained mill that begins at a highpoint on the sloped property, designed to take full advantage of gravity, where the ripe cherries are placed in water and carried through the depulping process on a series of intricate canals to the drying patios below. If you search for the finca on Google Earth, you can see coffee drying on the patios, surrounded by steep lush mountains.

This bourbon is fairly small if compared with the Rwandan Bourbon the size of the beans is quite uniformed based on average. When planted at high altitude, the beans can be quite densed. We did a multiple test over the Ikawa to see which is profile brings the best out of the bean.

A short development time with a flat drop temp was highly acidic, When we did a negative drop temp, it was ok. There was this notes of tanginess like orange juice. Something like the Kopi Rakyat. However, when we prolong the development time and push the caramelization process higher, there was this combination of toffee and pear aroma..

We felt that, this was the right profile for this coffee. When grounded, you can smell the toffee along with black berry and citrus. When brewed, it taste like orange juice and acidity was towards mild citrus. The aroma is towards pear, blackcurrant and toffee. The taste is clean and balanced.
