Hacienda Carmona has been in Maria Zelaya’s family since the 1910. It was purchased by Maria’s grandfather. After the death of his grandfather, the farm was passed to Maria’s mother and now Maria is the 3rd generation owner of the Hacienda Carmona.
In 2012, the Carmona farm was attacked by the coffee rust disease. With the help of her son, whom now take charge of the day to day activity both of them overcome the disease by managing plant nutrition, pest control as well as tissue management of their coffee plantation. Not only they manage to overcome the disease, the farm output began to increase as the plants become healthier and quality of their coffee improve too.
Luis Pedro Zelaya made a lot of changes in the management. For many years, their production was commercial centric. Over time they have migrated into solely producing specialty coffee. The total land size of the Hacienda Carmona is 675 hectares. 112.5 is dedicated for coffee plantation.
The family operate their own mill which is located at the farm where they process their own cherries. What we have here is the selection of coffee from the Bella Vista farm owned by the Hacienda Carmona. The coffee planted at this farm are mainly of the Bourbon variety.
The coffee here are processed as traditional washed. This process has been perfected over the last 100 years by the Zelaya family. In this lot, the coffee is dried off in a controlled environment to ensure the quality of the cup. First, the cherry is selected and fermented prior to depulping. Then after depulping, the coffee is washed to remove all the mucilage. Then the coffee is placed on a raised bed. To control the environment of the drying process, a greenhouse was built and all drying process is done inside the greenhouse. Sensor controlled airflow is used to ensure a more uniform drying process.
This coffee is very sweet. Upon grounding, the dry aroma is citrus, grapefruit, lime, almond and caramel. Vivid citrus, grapefruit, mandarin orange at first sip. It has aroma of orange peel. The flavor is clean & clear. The cup is very very sweet.
