Guatemala Acatenango Santa Felisa Red Pacamara

Finca de Santa Felisa is currently being managed by the fourth generation of Mr Trinidad Cruz offsprings. The farm was founded back in 1904. Over time the farm was developed into Maaya Kakchiquel Zone, working with the local families, some of the families still work at the farm since its establishment.

It is located in a micro-climate in the Acatenango Volcano valley. This selection is selected betweem 1600masl to 1700masl. The cool weather conditions makes for a slow ripening of the beans thus enables it to capture the necessary nutrient to make the perfect balane of carbonic acid which resulting in a good cup profile.

The farm is a proud organic coffee producer. They avoid synthetic agrochemicals,reforest for protection of water sheds & avoid chemical based to control pest. Composting is done through the breeding of red worm and it served as fertilizer into the plantation. This farm is lead by a very passionate agronomist that strive in sustaining both quality and conservation of its ecosystem.

We tested this coffee over the Ikawa with multiple roast. When roasting is done quickly, we were not pleased with the acidity, when its too long its toasty and flat. When the roast was more focused on the caramelization process, we are able to get the aroma of burnt sugar with the combination of orange peel and black berry. The acidity is bright, with notes of black berry and sweetened prune juice followed by orange juice after taste. The taste is clean and bright.
