Finca De Santa Lucia - Colombia
This farm is located in La Plata, South West of Bogota. It is owned by a prominent person from the Colombian coffee industry, Yiver Vargas. She is the
Vice-President of Colombia’s International Women’s Coffee Alliance (IWCA-Colombia). It is a family run farm, which is approximately 5 hectare in size. She runs the farm together with her daughter and two sons. Yiver has been planting coffee for the past 20 years.
The coffee in this farm is planted together with Bananas, Avocados and Sugar cane. This farm is located at 1650 masl. The coffee varietal from this farm are castillo and cattura.
The coffee is processed as white honey. The coffee mechanically washed is and pulped until a minimal amount of the mucilage is left on the beans. With a very minimal mucilage is left, during the drying process, the colour of the beans became white with slight brownish unlike the yellow honey process. White honey are unique process as it has the potential of adding the funkyness/character to the cup.
We did two type of roasting to this coffee. The first is the medium roast and the other is the light roast. With the light roast, we do get a rather funky/nuance acidity. Its not that balanced. Its still good. However, when we pushed the roast level slightly further to a higher drop temperature, the funkyness acidity turns out to be fruity, and the cup become more balanced. It has a red-tea like body, with notes of strawberry acidity and it is juicy like a ripe plum. The coffee has a honey like sweetness after 7 days of resting from the roast date.
