Ethiopia Guji – Tesfaye Bekele
Tesfaye Bekele is a well known coffee processor in the Guji Region. He started the farm when there was a bush fire in the village of Kumure in Guji. The rationality behind it was to create a sustainable farm for the local community. His idea grew and helped the local farmers to export its coffee out of Ethiopia.
This coffee is different from the typical heirloom that we have in our selection, this coffee is from the Welicho varietal which can be found at large in the Kumure village and some parts of Guji. This privately owned farm consists of 221 hectares an is located between 1850 to 1950 masl. Everything is done and processed at the farm. Cherry is typically pulped with a pulper. At this farm, the mucilage will still remain intact even after depulped. The coffee is then fermented on tanks and washed in clean water to remove the mucilage. The coffee is 48 hours prior to being washed. When there is still mucilage during the fermentation, sugar tend to remain intact and this create an unusual process to alter the taste of the coffee. The coffee is then dried in parchment for 9-15 days on elevated beds.
This is must a try coffee. After grinding, the aroma consist of bergamot, lemon gras, lemon custard and jasmine. The main notes is bergamot followed by lemon black tea at the back. It has a strong jasmine fragrance with solid taste. The aroma is sweet and elegant!
