Ethiopia - Anasora Anaerobic Washed

This is the second collection of coffee from the Anasora washing station. The first selection that we have was also from this station but from a different variety. It was Wush Wush variety. In this selection it’s the combination of the Certo and Wolisho variety which can only be found and planted at an altitude of more than 2100 masl particularly in the coffee zone, Guji.

This coffee is also source from the sister company of Nordic Approach, by the name of Tropiq. Led by Sameon Abay, for ensuring quality of these new process in Ethiopia, he has been doing an excellent work in ensuring that the end result in the cup exceeds the expectation.

Anasora is located quite remote and before 2018, only naturals coffee were processed there. In February 2019, the washing station was completed and together with the team from Nordic Approach, coffee produced by distinct method has began to come out from this particular washing station. THere are about thousands of famers that contribute coffee cherries to this washing station. Each farmers can typically have fewer than 1500 trees per hectare and each tree produces approximatly 150 g of green coffee per tree.  On average, these farmers have land size in the range of two to three hectares.

This coffee is processed as an anerobic washed process. Its different from the wush wush that we have late this year. The selected cherries is first put in a sealed tank and fermented for a period of time. This process will create a vibrant, fruity and tropical" notes in the cup. Then, the cherries is fermented for 72 ours and then it is depulped fully. The coffee bean is then dried on the African beds until reaching the desired % of moisture.

As a result, The dry fragrance can feel the aroma of lemon, orange peel, black tea, honey and wild ginger. One entrance is vivid lemon, citrus and orange marmalade flavor, with charming wild ginger floral fragrance, black tea and vanilla scent in the back, clean texture, fine and full flavor.
