Ethiopia - Almaz Sahile
After a while drinking experimental process of coffee from Ethiopia we do miss the classic wash and particularly the classic natural sundried coffee. What we have here is a classic Ethiopian Natural process coffee from the a small town of Bulle located in Yigacheffe.
This coffee comes from a small size coffee farm of 10 hectares in size. All of the coffee comes from the same farm. This farm is owned and managed by a lady by the name Almaz Sahile. She inherited the farm from her father who has been farming coffee since Almaz was born.
The farm is located at an altitude of 2000 masl. This farm is a family owned farm, Almaz herself has 11 children most of them are still at school. Coffee cherries are harvested by family members and it is then hand sorted to remove the unripe and overipe cherries before there are sent for processing. On the drying beds, underripe and defective cherries will be sorted out by hand during the first day. Drying coffee at high altitude is slower as temperature is lower. Few years back, Almaz travelled to Kenya to learn more on the washing and natural processing in Kenya. In Kenya the Single Layer Drying (SLD) is common to expedite the drying process of the coffee. However, this technique requires a lot of space. When She came back to her farm, she applied the same technique by managing the height of the layers where to coffee to modulate the flavour of of her coffee. The first few days, the cherries is dried in a thin layer of 3-4 cm. After few days, the layer of coffee is between 6 to 10 cm. With this, the coffee is moved frequently to ensure a homogeneous drying process. The drying process will take around 20 days.
Almaz export coffee directly from her farm by the encouragement and incentives for small scale farmers provided by the government.
Upon grounding we could detact the rich aromas of strawberries, peaches, blueberries, grapes and sweet flowers. You can feel the sweetness at the first entrance, Strawberry jam, blueberries, peach fudge, with bergamot and frangipani scents, and then Grape and violet aromas, the aftertaste is a long strawberry wafer and orange peel aroma, and the texture is full juicy, berry style is sweet and charming.
