This is the third coffee from the El Salvador’s Los Pirineos. The man behind the Los Pirineos, Snr Gilberto Barona is no stranger in the coffee production in El Salvador. He is among the top 10 coffee producer in the annual El Salvador COE auction.

What we have here Is the native Salvadorian Pacamara variety and processed as Red Honey. Red honey process is can be very challenging to process. It requires extra monitoring as the excess mucilage on the coffee bean during drying tend to attract insects that could affect the processing. To accomplish a red honey process, the seeds are left without turning for 3 days, allowing a build up of temperature, hence an extended fermentation process which eventually turning the drying coffee colour to a red colour.

The Salvadorian Pacamara are planted between 1350 masl to 1450 masl.

This coffee is fruit forward. Grind it and you can feel the aroma of grapes, blueberries and blackberries. The first entry is dark berry aromas such as blackberry, grape and blackcurrant. The blueberry, grape and orange belts have a little onion aroma, the taste is smooth, the flavor is full and juicy.
