Ethiopia - Guji Uraga Black Honey Process

This Guji Uraga coffee is processed as the honey process where the mucilage is still intact and only the outer skin of the cherry is removed prior to drying. 2020 has seen a lot of experiment from the Ethiopian coffee producers to produce exciting coffee with exciting notes for the world market. The climate change has also affected the production of coffee in Ethiopia and the peak production shifted to a different time zone. Also, with the political instability in Ethiopia has also affected the delivery and the logistics of the coffee. This particular coffee was ready at the warehouse since July 2020 and arrived safely in Malaysia in late November.

This exceptional coffee is processed at Primrose, a cooperative and a large coffee exporters based in Ethiopia.

The coffee is produced by various small holders farmers whom owns less than a hectare of land and produce coffee at their back yard. For this selection there are atleast 600 contributors that contribute to the production of this Black Honey Process coffee.

Black Honey process is much common process for coffee produced in Costa Rica due to limited water supply on the highlands. For Black honey, only the outer skin of the cherry will be removed and most of the mucilage will remain in the coffee bean. This process requires extra care and monitoring. The cherry must be frequently tumbled through out the drying process as it could easily attract unwanted bugs/flies that could damage the coffee bean. By looking at the green bean, the team at Primrose has been doing a great job. 

Upon grounding, hints of chocolate and nutty aroma. At first sip, the coffee is silky with a very sweet tropical fruit punch flavour. As it gets cooler, the coffee tends to be more creamy (mouthfeel) and the fruit note tend to change from sweet to sour and sweet again. Reminded us of the Soursop fruit. Sweet, Sour and Tart. Pineapple, banana & Apple. Lacks the aroma, but elegant in the taste. Sweet cup throughout.
