The farm sits at approximately 1950 metres above sea level, an altitude that supports slower cherry maturation and concentrated sugar development. The surrounding mountain climate gives the farm a stable balance of daytime warmth and cooler nights. These conditions allow Edwin to work with ripe, high-density cherries suited to extended fermentation and natural drying.\u003c\/p\u003e\n\u003cp\u003eGeisha is one of the key varieties used in Edwin’s experimental production program. The variety traces its genetic background to Ethiopia and is valued for its floral structure, layered aromatics, and refined acidity. In Colombia, Geisha takes on a distinct expression shaped by Andean altitude, soil composition, and local climatic rhythm. At Campo Hermoso, the variety is handled in small, carefully separated lots to protect clarity throughout processing. Its delicate structure makes it well suited to controlled Mossto fermentation, where the goal is to build complexity without overwhelming the identity of the variety.\u003c\/p\u003e\n\u003cp\u003eFor this Natural Mossto Lactic lot, cherries are hand-picked at full ripeness and sorted carefully to retain only mature, healthy fruit. The selected whole cherries are placed into fermentation tanks, where they undergo controlled fermentation with Mossto, the juice produced from coffee cherries during Edwin’s processing work. During this stage, Mossto and carbon dioxide are introduced to encourage a low-oxygen environment and guide fermentation activity for approximately 48 hours. After fermentation, the cherries are dried naturally under full sun, receiving around eight hours of sunlight per day before resting for twelve hours.
