Signature coffees are the 15 ones with taste profile idealized and chosen by Capricornio Coffees directors Edgard, José Antônio and Luiz Roberto, and validated by the Quality Control team.
Normally its a combination of the classic Brazilian pulped natural process as well as the natural process coffee put together as a green bean blend. The idea is to create taste profiles that are repeated every year, offering not only quality, but also consistency in finding the sweet spot, hence the name "Dulce Signature"
Capriconio Coffee was established to breathe new life in five region in the souther states of Parana and Sao Paolo, which until the 1960s, was a Brazil vibrant coffee producing region. Due to climate change back then, there was a terrible frost which affected local producers in the region for a few years. While in up north the farmers from Minas Gerais were flourishing, the production of coffee in Parana reduced as most of its producers invested heavily on developing new farms in Minas region which left their Parana and Sao Paolo farm underdeveloped.
Now, as the climate take another turn, the region is becoming attractive to farmers again, yet hardly anyone saw the specialty potential of these region. Capricornio coffee saw this as a potential, over time they have developed 7 categories of offerings from coffee produced in the Sao Paolo state. They are the Microlots, Estate, Boutiques, Collective, Varietals, Exclusive and Signature.
What we have here in this selection is the Signature series called the Dulce Signature. Its a combination of Yellow Bourbon and Catuai which was processed as Pulp Natural and Natural. Each year the Dulce Selection is never from the same farm nor the same process. The qualities that the curators look for is to look for the taste profile which is the same each year Nutty aroma, Sweet, Juicy and Long Caramel after taste. This coffee is best as black as well as brewed with milk.
Upon grounding, the coffee has a hazelnut aroma, at first sip is red apple, dark chocolate with nutty aroma. Very nutty and smooth body.
