

"Upon grounding, the dry aroma consist of peach, strawberry and blueberry aroma. At first sip, you can feel the aroma of orange and grapes. In the midsection, scent of peach, strawberry began to emerge with the aroma of black tea. The after taste of this coffee is long lasting."
This is another collection of Bolivian coffee that was procured from Fincas Los Rodriguez. La Linda was founded back in 2012 and its first year of production was in 2015. Its a relatively new farm owned by the Rodriguez Family. Land size is approximately 10 hectares and sits at an altitude of 1550 masl.
There are various variety of coffee planted in La Linda and mainly Java and Caturra are the most performing cup and planted for production. What we have here is the coffee of the Java Variety. In Bolivia, Java coffee is grown in the Andean region of the country, where the high altitude and cool temperatures provide ideal growing conditions for this variety. Bolivian Java coffee is considered to be of high quality and is known for its unique flavor profile. It is considered as a rare coffee variety and it's not commonly found on the market.
La Linda has been the success stories for the Rodriguez Family. It is among the first new farm which was acquired by the family and now it is the blueprint for the newly acquired farms in Bolivia.
This coffee is processed Natural process or sundried coffee. The coffee is first picked and process on the same day at the Rodriguez family Buena Vista mill. It is first sorted using water. All floaters is removed and then the cherries is dried on raised beds and turned regualary to ensure it is dried evenly. After reaching 25% moisture level, the semi dried cherries is then dried using a mechanical drier to minimize the risk over fermentation. This process is done slowly using a mechanical dryer for 76 hours until it reach a 16% humidity. The coffee is then rested in a silo for 5 hour and carefully dried outdoor until it reached the humidity of 11.5%. The coffee is then transported to the La Paz where the dry mill is located. Upon milling, the coffee is carefully sorted manually by hand under the UV light and finally optical sorter is used prior to packing for export.
