Ethiopia - Banko Gotete by Alemu Bukato
This is the second time we sourced coffee from the Alemu Bukato farm. The first source that we did was last year where we managed to get the Natural process coffee. This time around we managed to score few bags of the Washed process coffee from the Alemu Bukato washing station located in the Banko Gotete which is located in the Kochere district near Yigarcheffee.
This coffee is contributed by the villagers surrounding the village. The washing station is located at the 2100 masl and most of the coffee cherry were grown up to 2300 masl. This will make the coffee in the cup is bery like and aromatic and floral.
This coffee is considered as a microlot and also a highly sought after for the reputation of the terroir and the quality processing system which was implemented by Mr Alemu Bukato.
This coffee is process as washed. At the washing station, when the villagers sent the cherries. The cherries is first weigh, and only the the riped cherries is selected. Mr Alemu paid a premium for the riped cherries. The coffee is then sent to a tank and any floaters is removed. The coffee is then fermented for 36 hours in the water and after that is sent to the pulping station. After that the coffee is fermented again in water before it is washed to remove the mucilage. The process is somewhat simillar to the Kenyan washed process. Which is reflected a cleaner cup of coffee.
The ground coffee has sweet and rich aromas of lemon peel, peach, black tea and white flowers. You can feel peach juice, lychee and lemon at the first Sip. Lemon peel, followed by the aroma of bergamot and rich orange blossom, with lemon custard and delicate oolong tea in the aftertaste. The cup is. Sweet, beautiful and juicy, complex and changeable.
