This coffee is from the same producers of Finca La Loma, Snr Alfonso has been planting coffee since the 1960s. He bought this farm and planted 150,000 coffee trees on the farm. Since then, coffee has always been his family’s source of income.

His son, Juan Carlos Guerra is also active and involved in the daily activities of the farm. Under his influenced, the farm is focused on quality improvements and also focus on the specialty coffee production. One strategy in the farm’s move towards speciality coffee has been to invest a great deal of time and energy into processing and lot differentiation. These efforts increase every year, and with the ideal natural conditions of Las Mercedes–including the elevation and climatic conditions-we expect the quality of Las Mercedes’ coffees (already very high) to only improve in the coming years. La Gallineta (Ga-Yi-net-a) lot is an ideal example of the dividends paying off! The lot is a mix of Red and Yellow Colombia, picked from various locations throughout the farm. Selective picking of this specific variety of coffee ensures that the coffee’s unique properties are preserved.

This lot is has been selectively hand harvest, before being delivered to the farms state of the art mill. First, the coffee is sorted by machines and by hand. The selected cherry is then goes through a long period of extended fermentation of 204 hours in a basket after which they are moved on to patios to be dried. The Cherries are turn regularly until it reach the optimum humidity. Once dried, the coffee is transferred to a milling station to remove the skin and packed for shipment. The extended fermentation truly modulate the taste and notes of the Colombian varietal.

Upon grounding, the dry aroma is black plum and slight winey. The cup is sweet with bright acidity of Sultanas, plums and red guava. A fruity cup throughout and a subtle velvety feels in the cup.
