Late last year, we have purchased the Sumatran Prestige Cup ACE/COE #8 for the year 2019. It was Kopi Rakyat, the taste of the coffee is different from the Sumatran beans that we have tasted before. We have always been on a look out for the Sumatran Prestige Cup beans. 

This time around we have found this gem. This is a single farm produce by a farmer called Pak Helmi. Prior to the procurement of this coffee, we did asked the winning bidder for a few samples of the lots that they have bought during the competition. We fell in love with this coffee due to the cup that the coffee produced. 

The Kopi Rakyat was more mandarin orange notes while this one is more towards green apple with a long after taste finish.

We have always been a fan of the washed coffee from Sumatra. While the Giling Basah is widely used, the full washed process are not that common with Sumatran producers. This process produces somewhat a clearer and cleaner taste. 

This coffee originates from Jagong Jeget, Bukit Kemuning, in Aceh Tengah. The elevation of the farm is around 1500 masl. During the competition, the coffee was ranked at #12 by the jury with a scoring points of 86.06. The top scorer scored 88.84. 

We did conduct a series of roast to get the best of the coffee using our Ikawa. Light roast suits best for this coffee with an ample amount of time during the maillard process. This is to highlight the fruitiness of the coffee. The DTR is considered to be shorter than the usual that we always do with the Bukit Barisan beans. This is to avoid high degree of caramelization that could affect the Green apple like acidity of the coffee. We were truly surprised by the slight lemon grass notes which to us is quite special. 

To sum up, the coffee is juicy like green apple, as it gets cooler, the apple juice tend to taste like plum. The bitterness of this coffee is like a well proportioned caramel. Look out for the lemon grass notes! Very unique indeed.
