This is another Private auction collection that we obtained from Santa Felisa. This lot is of the yellow catuai process as Bulk Yeast Fermentation.
This is a 2020 Private Auction selection and this lot is known as "Blood Moon". The Yellow Catuai coffee is process as Bulk Yeast Fermentation. The coffee is planted at El Paraxaj, one of Santa Felisa COE winning farm.
Upon picking, the yellow catuai cherries were fermented under anaerobic fermentation for 3 days and dried on a patio with 30 cm heights in layer and exposed to the sunlight. By bulk, fermentation, the layer of the coffee during the drying process is 30cm in height. To ensure a harmonize flavour and quality of the process, the cherries were turned frequently. It takes a while too for the drying process to complete, approximately 24 days.
Upon grounding, The dry aroma is strawberry, blueberry, grape, orange peel, caramel and toasted almond aroma. When you sip, you can feel citrus, orange peel, grapefruit, cranberry, and pineapple flavors, followed by blackberry and grape flavors, with an oolong tea fragrance in the aftertaste. Very elegant cup.
