

"Upon grounding, it has a sweet and tangy aroma of lemon peel, peach, bergamot and white flowers. At first sip, lemon custard, peach and bergamot are the main flavor, followed by the fragrance of Jasmine and flavor of strawberry. As it cools down the lemon peel aroma and jasmine fragrance became clearer. The coffee is sweet and delicate."
Cerro Azul is one of the top farms owned and operated by Granja La Esperanza. This farm is located in Trujillo in the department of Cauca. Cauca is a land of where exotic coffee is from.
Every year we will buy at least an exotic variety from this farm. In 2019, we procured for the Pacamara Natural which was planted in the Las Magaritas farm. In 2021 we obtained the Sudan Rume washed, which was also planted at the same farm, Las Magaritas. So Far we have procured exotic coffee from this highly regarded producers that includes Sidra that was procured towards the end of last year. We hope to bring new lot soon.
This coffee is a Hybrid Washed (HW) where after picking and sorting, the cherry is first fermented for 19 and 22 hours then the cherry is pulped without the presence of water. Once the cherry is pulped, it is then fermented again for 35 hours aerobically for 35 hours. Next, the coffee is then fully washed and it is mechanically dried at a temperature range 35C to 45C until it reached the moisture level o 10.5%
This selected lot is planted at an altitude of 1700 masl. The seeds of Geisha of this farm is originally from Panama. Back in 2007, Don Rigoberto had the opportunity to lease a piece of land in Panama. The farm is called La Carleida. As an expert in processing coffee, Don Rigoberto had the opportunity to produce high scoring Geisha in the following year in the Best of Panama series 2008. In BoP 2008, the farm was placed at #1. From there onwards, Don Rigoberto has been bringing in geisha seeds from panama to his farm in Colombia.
