This lot is from an independent farmer located in the Acevado region in Huila where Snr Yoni Edinson has been farming. For many years, Yoni has been planting Caturra, Colombia and Castillo but in recent years, Snr Yoni has been experimenting with Pink Bourbon which was planted about 5 years ago. Apart from experimenting in the crop, Snr Yoni has also been experimenting in the temperature controlled fermentation as well as the anaerobic fermentation.

It is said that Pink Bourbon mutation was first found in Pitalito, Huila. This recessive genes lead to the expression of the colour yellow and red. A proper isolated and contained lot can maintain its colour (pink) after the pollenization process as well as its quality of the variety character. Though, pink bourbon is not officially a varietal, a certain care during the flowering period/process leads to this mutation of the Red and Yellow bourbon. Pink bourbon has an above average glucose among the bourbon family which gives a delicate, soft and complex profile.

This coffee is processed as wet process. The pulp is remove mechanically and the remaining mucilage is removed via a mechanical scrubbing and then it is washed and taken too the dry beds for drying.

The dry fragrance is lime, grapefruit, orange peel, peach, floral and black tea. At the entrance, you can feel the citrus flavors of lemon, lime, grapefruit, orange peel, etc., accompanied by peach, orange blossom and black tea, the acid value is bright, delicate and elegant.
