This is our 4th edition of coffee from the owner and farmers of Finca La Loma and Finca Monteblanco which is situated in Pitalito, Huila. To add, this is our second addition of geisha from Finca La Loma, which sold out pretty fast when we first introduced it as part of our offerings. Information about the farm can be found here.

The difference between this and the earlier ones that we had is that this coffee is processed as Cold Fermentation Washed. Snr Rodrigo Sanchez is also an experimentelist when it comes to coffee processing. He has many ways of processing his coffee without compromising much of the original taste in a way that we could tell that this coffee is from which terroir.

Cold Fermentation Washed is a decelerated wash processing, where when the beans has been depulped it is left in refrigerated rather than at ambient temperature for the fermentation stage. Snr Rodrigo and his team pioneered this process back in 2015 where he learning it from the wine producers. Temperature plays a very important role during fermentation in the wine industry. This is to preserve the sweetness during the extended fermentation process. In a normal ambient temperature, extended fermentation will enhance the acidity of a coffee while at a controlled temperature, the fermentation process restrict the excessive microbe culture during the whole process.

The temperature used for fermentation is 10-13c for the lengthy period of 76 hours.

As a result, The dry fragrance is bergamot, lime, honey grapefruit, lemon peel. Continue to sip lemon zest, bergamot, floral fragrance, Honey lemon black tea, followed by  pears, peaches with the aroma of vanilla, the flavor is delicate, charming and elegant.
