Guatemala Santa Felisa Milky Way Geisha
This is another collection of Geisha from Santa Felisa SA planted in one of their farm named Chualax which is located in Acatenango Valley. This coffee is planted at 1850 masl. At higher altitude, the temperature would be slightly lower than the other two types of Geisha that we have from our Geisha offerings.
The coffee is process as Natural Yeast Fermentation. Not to say that this coffee is soaked with yeast to manipulate the flavour but instead, the coffee with 22 Brix is dried of naturally with a longer than usual no of days in this case 30 days to allow yeast to prevail from the drying fruits. When the yeast is began to occur, the drying process is halted so that the yeast would act in the metabolic change of the cherries
The Milky Way geisha has always been in high demand due to the end result within the cup. It is known for its blueberry bubble gum like notes within the end cup. When grounded, the coffee has a very sweet dry aroma. Continue to sip, the blueberry bubble gum emerges followed by peach juice and strawberry with bergamot and jasmine aroma. The coffee is multi-layered and varied, it is sweet, acidity is bright. This is a very rounded and juicy coffee
