Colombia - La Flor (Pink Bourbon) by Omar Saul

This coffee is a varietal of Pink Bourbon produced by a microlot farmer by the name of Omar Saul. Omar Saul has been planting coffee for the past 10 years. His farm is located in Huila, a very productive coffee producing region. Its competetive for a microlots producer. To ensure the sustainability of his farm, Omar Saul focus on the production of Pink Bourbon.

La flor is position along the ridges and hills and sits at a range of 1700 to 1900 masl. At this altitude, pink bourbon tend to grow and mature slowly. Pink bourbon is a natural cross between a red bourbon and yellow boubon. Pink bourbon has more mucilage than yellow and red bourbon. At high altitude, the coffee is more likely to be rich in sweetness.

This coffee is processed as Anaerobic Honey. A combination of two process where the harvested riped cherries ar subject to a anaerobic fermentation for 48 hours. Subsequently, the cherries is then pulped and dried together with its mucilage.

Upon grounding the dry aroma is citrus, grapefruit, orange peel, honey and floral aromas. When sipped, it has orange, grapefruit and citrus flavors. The aroma of dried cranberry and flowers emerges, the tail section has the aroma of honey and black tea, and a smooth texture.
