Colombia Esperanza – Las Magaritas Pacamara Natural

We fell in love with the La Esperanza Las Mariposas coffee that brought in few months back. The quality of the greens and the results of the roasted beans were pretty amazing. In the second shipment that we ordered, we decided to try out the La Espranza Pacamara natural from the same farmer but at a different farm. This Pacamara is grown at the farm called Las Magaritas.

Las Magaritas is located in Valle de Cauca, Caicedonia. The area is a well known area where coffee is being planted. The farm is about 61 hectares in size and has an altitude of between 1570-1850 masl. The coffee is processed as natural, and it is slightly different from the usual depulp and dry method. In this case, the depulping process is done without water to preserve the mucilage from being contaminated with water, the coffee is tested sensorially to determine the ideal duration of the fermentation process. The coffee is fermented between 19 to 22 hours prior to the depulping process. After the skin of the cherry has been removed, it is then fermented again for 35 hours.

The subsequent process is the drying process, the coffee is left in a silo with an approximately 48 hours at a temperature of approximately 35C. It is then dried mechanically for 15 days.

With the combination of science and technology, the cup is just amazing. When coffee is in the form of ground, you can fee the aroma of berry, black current along with papaya. At first sip, the acidity is towards cranberry juicy with main notes of red guava, papaya and light wine. Body is thick and the coffee is sweet and juicy which is quite fascinating.
