Colombia – El Mirador Catiope Lactic Natural

Elkin Guzman has been recognized as one of the best multigenerational coffee producers of Colombia. He is an agronomist as well as passionate and interested in his scientific approach to coffee production. He is inspired by systematic research and experimentation. When it comes to unlocking the secrets of coffee, it is all based on the data.

About 15 years ago, he purchased El Mirador farm which was used to belong to his grandparents about 20. 95% of the coffee produced at El Mirador are destined for the export market. Like many of our collection from this farm, it is mainly the reserved collection of the unique variety, such Tabi and Striped Bourbon. What we have here is the Catiope variety.

The Catiope seed was obtained 7 years ago from CeniCafe experimetal station in Timbio, Cauca. He took interest on the variety due to its production capacity, bean structure and its tree structure. Catiope is a hybrid of Caturra and Ethiopian hierloom, Catiope.

This coffee is process as Natural Lactic. First, Elkin will measure the brix content of the coffee to determine the harvest. It is only harvested when it reached 90% ripeness. Then the cherry is placed in a tank and the cherry is than sterilized in a salt solution to create a biome conducive to lactobacillas for lactic fermentation for 60 hours. The fermented cherries is then undergo a 160 hours of dry fermentation (without the presence of water) and it is dehydrated. After the controlled fermentation process, the cherries is then dried on a raised patio for 25 days until it reaches the targeted moisture level.

Upon grounding the coffee the dry aroma is a strong aroma of wine, rum, raisins, cherry and chocolate. At first sip, grape juice with rum at the back. The aroma of wine-stained raisins is transformed into mango in the mid section, with a little peach and blueberry aroma. The coffee has a bright acidity and smooth texture.
